Gloversville plant being fixed up for sausage maker

Work is under way to retrofit a former leather facility to accommodate a meat-smoking operation in Gloversville, the Fulton County Center for Regional Growth announced Tuesday.

Pata Negra LLC will be moving into the former Perrone Leather facility at 20 Industrial Parkway.

The company, run by food product entrepreneurs based in Spain, is planning to make cured meats using domestic and foreign pork, according to a CRG news release. The release says CRG helped arrange financing for the purchase of the 22,344-square-foot facility and for renovations and equipment.

Details of the purchase were not immediately available Tuesday.

The 5.9-acre parcel is valued at $166,600, according to county property records.

CRG officials did not return a call seeking comment for this story.

According to the news release, the company is run by business professionals who own Pata Negra Jan S.L., which already is involved in the gourmet food industry in Spain and other European countries. Its owners are involved in livestock, Iberico ham, sausage-making, retail gourmet outlets and prepared foods businesses.

Renovations in the Gloversville facility entail creating drying rooms required to maintain strict temperature and humidity controls.

In a statement included with the CRG news release, Pata Negra general manager Ignacio Rodriguez Saez de Ibarra said the startup of operations is planned for the springtime.

“This location provides us with right location and the water, sewer, warehousing, transportation access and employment resources we need to be successful,” he said.

Pata Negra expects to employ as many as 12 people.

The company’s initial focus will be on turning domestic pork into Spanish chorizo, a dry cured pork sausage with garlic, paprika and other spices. The company plans to sell it to restaurants and retailers in the Northeast.
