Squashing hunger

Cornell Cooperative Extension will host a special event entitled “Squash Your Hunger” this Thursday, Sept. 18, at the Schenectady Downtown Farmers Market. Learn healthy ways to prepare winter squash, one of fall’s most bountiful vegetables.

As part of CCE’s ongoing Cooking Demonstrations and Nutrition Education, a butternut squash and black bean side dish, and squash soup will be prepared. There will be delicious samples and recipes available.

The Downtown market is held from 9 a.m. to 1 p.m. each Thursday at Schenectady’s City Hall. On Tuesdays, the market is at St. Luke’s Church at 1216 State St., from 9 a.m. to 1 p.m. Both markets run through October.
