The owners of Chez Sophie Bistro, the award-winning French restaurant situated in The Saratoga Hotel, have decided to close the restaurant this fall and move to a vineyard in the south of France.
Chef Paul Parker and his wife, Cheryl Clark, say in a letter to patrons on the restaurant's Web site that they will be moving with their children, Nico and Léo, to a vineyard to work and present the property as a vacation destination. They will be helping to restore a medieval castle on the site.
"We'll serve guests meals from local produce cooked over olive wood and grapevines in an eight-foot-wide fireplace under the vaulted stone ceiling of a 15th century farmhouse," says the letter. To read the complete letter, and view photos of their new French destination, click HERE.
Chez Sophie Bistro was founded in 1969 by Parker's parents, Joseph and Sophie Parker.
