A new French restaurant is opening at the Culinary Institute of America.
The Escoffier Restaurant had been the Hudson Valley culinary school’s flagship eatery before it closed in July. The Poughkeepsie Journal reports that after $3 million worth of renovation, the school will reopen the space to the public on a limited basis Wednesday as the Bocuse Restaurant.
The official grand opening is Feb. 15.
The restaurant is named after the chef famous for bringing about a more modern, light variety of French cooking.
